Kootu recipe

Introduction:
Kootu is gravy having blended mix of vegetables. Whenever you will cook kootu, your kitchen will be filled with exotic aroma having a fine mixture of lentils and roasted spices. Eat it with chapatti or poori and enjoy this mouthwatering dish. Try the following lengthy but easy recipe of making vegetable kootu.

Ingredients:
  • Mixed vegetables (one carrot, one potato, one brinjal, half cup of peas)
  • Two big sized tomatoes
  • Salt as per taste
  • Half teaspoon of turmeric powder
  • Half teaspoon of mustard seeds (rai)
  • Half teaspoon of cumin seeds (jeera)
  • Four curry leaves
  • Four teaspoon grated coconut
  • Quarter teaspoon of heeng (asafetida)
  • One stick of cinnamon (daal chini)
  • One teaspoon poppy seeds (khus khus)
  • One teaspoon of red chili powder
  • One teaspoon of coriander powder
  • Two teaspoons of chana daal
  • Green chilies
  • Fresh coriander leaves
  • Quarter cup of oil
Preparation process:
Cut the carrot, potato and brinjal into cubes and boil them with peas. Heat the oil and fry chana daal, poppy seeds, cinnamon, cumin seeds and mustard seeds till they start popping and changing their color. Cut the tomatoes into cubes and add them in the oil and fry till they start blending. Add all remaining spices with vegetables and one cup of water and let it cook on low flame by covering the lid. You can add more water if you want to keep more gravy. When starts turning thick, add green chilies and fresh coriander leaves and serve hot!
