Besan Recipes

Besan Kachori, i.e., Gram-Flour Fried Bread

Besan Kachori is a popular Indian snack that is prepared with gram flour. Once you prepare it you can even have it for 2 or 3 days.

The ingredients needed to prepare Besan Kachori are:
• Gram flour - 1 cup
• All purpose flour - 2 cups
• Nigella seeds - 1 tsp
• Fennel seeds - 1 tsp
• Oil - 3 tsp
• Cummin seeds - 1/4 tsp
• Asafoetida - a pinch
• Garam masala - 1/4 tsp
• Red chilli powder - 1/2 tsp
• Turmeric powder - 1/4 tsp
• Dry mango powder - 1/2 tsp
• Coriander powder - 1/2 tsp
• Coriander chopped - 1 tsp
• Water
• Salt to taste
• Oil for frying

In the Besan Kachori preparation we need to prepare stuffing and then dough to hold that stuffing and fry it. To prepare the stuffing heat oil in a pan and add cumin seeds, fennel seeds, and asafoetida and sauté. The add gram flour and stir fry. Add coriander powder, red chilly powder, garam masala, mango powder, chopped coriander and salt and stir for sometime. Then add some water so that the mixture is dough like and then cool it.

Take the all purpose flour in a bowl and add salt and nigel seeds to it and mix with oil and prepare a dough out of it. Add necessary water to prepare the dough so that it becomes soft.

Make lemon size balls out of that dough and press them with a rolling pin to make rotis of same size. Place the stuffing in the center of a roti and then place another roti on top it and seal the edges. Press it again to seal the stuffing’s inside. Fry this in a deep frying pan on medium heat until golden brown. Serve with chutney or curd.
