Carrot Kheer Recipe

It is popular Indian milk shake and is easy to prepare. Since the carrot is the main ingredient, contains Vitamin A. It is a healthy, tasty and colorful drink, which attracts everybody. It can be served any time as a drink. It can be given to infants from 8 months, as they are easy to digest. From 19th Century carrot kheer exists.

Ingredients:
Following are the ingredients required for preparation of carrot Kheer:
  • Fresh carrots 6-8 nos.
  • Full cream milk one liter
  • Sugar 2 cups
  • 1/4 tsp of Saffron
  • 1/2 tsp of cardamom powder
  • Sliced Almonds 5-6 nos.
  • Cashews 10 pieces.

How to prepare Carrot Kheer:
Wash the carrot. Then cut the edges of the carrot. Carrot skin has to be peeled with a knife or peeler. Cut the carrot into small pieces. Boil the carrot in a Pressure Cooker. Keep it aside.

Then boil the milk in a large pan, with a very low flame.
Take the boiled carrot and saffron and grind them like paste.
One’s the milk is boiled for 20 minutes add the carrot paste.
Stir it continuously and keep it on a normal flame for 20 minutes.
As per the individual’s taste, add sugar in to the milk.
Now heat the mixture up to the boiling state.
Add cardamom powder.
Let it cool.
If the Kheer is thick adding some, more milk and stir it.
Before serving decorate it with cashew and sliced almonds.
Serve it hot or cold.
