No recipe is complete without the use of ginger. It not only enhances the taste of the dish and gives it a fine aroma but also it makes it digestible. There are many healing and healthy benefits of taking ginger as well which makes it quite beneficial to eat. Allam pachadi is a chutney or thick gravy which is made with ginger and other spices and is complimented with dosa, kachori, besan or bajra ki roti and many other dishes. Down is the most tempting recipe of allam pachadi which is quite easy to follow.
- 2 thick pieces of ginger
- Salt as per taste
- One tablespoon black gram daal and one tablespoon Bengal gram daal
- Quarter cup water
- One green chilli and two to three round red chillies
- Two to three tamarinds
- Half teaspoon rai (mustard seeds)
- Two to three curry leaves (kurry patta)
- Two teaspoons oil
Soak tamarind in water. Heat the oil and fry the two lentils. When they start changing their color, lentils and fry till they change their color. Fry ginger pieces and red chilies till they turn red. Grind fried lentils, ginger pieces, tamarind water, green chilies and salt. Fry mustard seeds and kurry leaves till they start cracking and add to the grinded mixture. Allam Pachadi is ready.
