Set Dosa

Introduction:
Set dosa is another variety of dosa which is well known for its spongy and soft texture. It melts in mouth so quickly because of one special procedure and that is fermentation. Mixture is left for the whole night so that ingredients can work up together and rise at their natural abilities. You can serve set dosa with any chutney or bhaji. Following is quite an easy recipe of set dosa to make.

Ingredients:
  • One cup boiled rice
  • One cup raw rice
  • Half cup urad daal
  • Salt as per taste
  • Quarter teaspoon baking powder
  • Oil for frying
Preparation Process:
Soak the raw rice and urad daal for at least three hours and then grind them finely with this much water that keeps the mixture at medium consistency. Now again grind the mixture with boiled rice. Add salt and baking powder in it and leave the mixture overnight for fermentation. Next day, pour the mixture over hot frying pan that a medium sized round bread forms. Cook until it starts changing color from both sides. Add oil and fry till set dosa turns golden brown from both sides.
