Paneer Kheer Recipe

A creative approach to Kheer making is that of Paneer Kheer. Paneer is an Indian name for cottage cheese. It is made by curdling milk and hanging the milk. Paneer can be converted into a variety of delicacies one of which is Paneer Kheer. Making Paneer Kheer is the simplest as the following recipe illustrates:

INGREDIENTS FOR MAKING PANEER:
  • Milk – 1 ltr
  • Juice of 1 lemon
  • Muslin cloth

PREPARATION OF PANEER:
  • Boil the milk in a heavy bottomed vessel.
  • Add juice of a lemon in the milk and curdle it.
  • Remove from flame and cool.
  • Drain the water from the curdled milk and wash with water to remove traces of lemon in the paneer.
  • Place the paneer in a muslin cloth and leave to hang for 3-4 hours until all the water is drained out.
INGREDIENTS FOR KHEER:

  • Paneer – 1 ¼ cup
  • Full cream milk- 1 lts.
  • Sugar- 2 cups
  • Cardamom (coarsely pounded with a mortar and pestle) – 1 tsp
  • Almonds coarsely ground)- ¼ cup
  • Cashew nuts (chopped)-1/4 cup

METHOD:
  • Grate the paneer coarsely with the help of a grater or a food processor.
  • Bring the milk to boil and add sugar and stir.
  • Add cardamom powder and the rest of the dry fruit nuts along with the paneer.
  • Boil the mixture for 10 minutes in slow fire.
  • Remove from flame and leave it to cool.
  • Garnish with nuts and edible silver paper.
  • The Kheer can also be served along with fresh cream and roasted dry fruits for added effect.
