INGREDIENTS FOR MAKING PANEER:

METHOD:
- Milk – 1 ltr
- Juice of 1 lemon
- Muslin cloth
PREPARATION OF PANEER:
- Boil the milk in a heavy bottomed vessel.
- Add juice of a lemon in the milk and curdle it.
- Remove from flame and cool.
- Drain the water from the curdled milk and wash with water to remove traces of lemon in the paneer.
- Place the paneer in a muslin cloth and leave to hang for 3-4 hours until all the water is drained out.
- Paneer – 1 ¼ cup
- Full cream milk- 1 lts.
- Sugar- 2 cups
- Cardamom (coarsely pounded with a mortar and pestle) – 1 tsp
- Almonds coarsely ground)- ¼ cup
- Cashew nuts (chopped)-1/4 cup
METHOD:
- Grate the paneer coarsely with the help of a grater or a food processor.
- Bring the milk to boil and add sugar and stir.
- Add cardamom powder and the rest of the dry fruit nuts along with the paneer.
- Boil the mixture for 10 minutes in slow fire.
- Remove from flame and leave it to cool.
- Garnish with nuts and edible silver paper.
- The Kheer can also be served along with fresh cream and roasted dry fruits for added effect.
