Coriander Rice

Introduction:
Summer is up with full of its heat which can be soothed by using coriander and mint in the meals. Coriander contains in it a refreshing taste which not only gives meals a refreshing aroma but is also good to use as mouth freshener. Coriander rice have very minty flavor in them and is quite fast and easy to make.

Ingredients:
  • Two cups of basmati rice
  • One cup of fresh coriander leaves
  • One medium sized onion (finely chopped)
  • Salt as per taste
  • Quarter cup oil
  • Three to four Curry leaves
  • Quarter teaspoon asafetida (heeng)
  • One teaspoon urad daal
  • One teaspoon chana daal
  • Green chilies
Preparation process:
Heat the oil and add curry leaves and urad daal and chana daal and fry them till they change their color. Grind coriander leaves, green chilies and onions together and add it in the oil. Add salt and heeng as well. Then add rice and enough water that the rice gets boiled. Garnish with coriander leaves and serve hot!
