Vaangi Bath Recipe

Introduction:
Vaangi bath are the rice which are made with brinjal. These are made so spicy and yummy that no one can resist from eating them. This recipe is meant to be followed in the winter because it contains all the hot spices. So, if you see no sunlight out of your windows and feel the cool breeze against you skin then no doubt, this is the best day to cook vaangi bath.

Ingredients:
  • Four cups basmati rice
  • Two big brinjals (cut into slices)
  • Salt as per taste
  • Juice of one lemon
  • Half teaspoon turmeric
  • Four curry leaves
  • Half teaspoon mustard seeds
For Masala:
  • One teaspoon oil
  • Quarter teaspoon heeng
  • Half teaspoon sesame seeds
  • 2 cloves
  • One cinnamon stick
  • One tablespoon grated coconut
  • Half teaspoon chana daal
  • Half teaspoon moong daal
  • Half teaspoon cumin seeds
  • Quarter teaspoon of poppy seeds
  • One teaspoon of dry coriander
  • Four red chilies
Preparation Process:
First prepare the masala. Fry the lentils in oil. Mix all other ingredients with lentils and grind them to make a fine powder.

In a pan, heat quarter cup of oil and fry mustard seeds in them. Then fry curry leaves, turmeric, brinjals, lemon juice, salt and the grinded masala with quarter cup of water. Then add rice and three cups of water and boil till the rice gets ready. Serve hot with raita.
